Roasting Process

Our nuts are air-roasted with shells, shelled, or peeled; compared to frying, the lower temperatures used in air-roasting avoid the stressing of the nuts’ natural fats and guarantees a longer shelf life and ease of digestion.

The roasting is carried out in dedicated ovens. The ovens are carefully calibrated for each recipe based on the customized recipes, oven, and type of product.

The roasting process lasts from one to two and a half hours on average, depending on the type of nut, which is far longer compared to the 20 minutes it takes to fry the products. The longer cooking time makes it so our production quantities are smaller, however the taste our products acquire is more authentic and  well-appreciated.

Salting Process

Salting is a process that makes our products tasty and appetizing.

Salting is done in three steps: we first wash the nuts, then we salt them, and lastly, we let the nuts to dry in order to eliminate humidity before tasting them. That is how our salted roasted nuts obtain their exquisitely savoury yet well-balanced flavour.

Praline Process

For the praline process, the nuts (like hazelnuts, peanuts, almonds, etc) are shelled, then mixed with one part water and one part sugar. The mix is then moved into pots for the caramelization; in the pots the excess water evaporates until the caramel sticks to the nut. Through specific further processing, praline nuts are then obtained. The product may be customised according to the desired recipe. As the praline process stresses the nuts, we remind our customers that the praline products have a shelf life of 6 months maximum.

Custom production

Our policy does not provide for stocks; our nuts are only roasted on order, to ensure logistics and make the best use of warehouse space, so that all products can always be available, even in small quantities.

It’s exactly what it sounds like: our customers can request customized recipes to suit their needs and tastes, choosing everything from the type of nut to the type of processing, and even the packaging.
